It is a white paste cheese shaped like a big sweet. Its consistency is uniform and soft, its taste mild, delicate and fresh.

Its name comes from “giunco” (the typical wooden mold used to store it). It is usually sliced and served as starter.

Smoked Burratina

 

The typical Apulian burratina is also produced in the smoked variety. It is naturally smoked in ovens with wooden shavings. Its taste is delicate, intense and slightly smoked.
