Smoked Ovoline

 

It is a spun paste and medium-hard cheese shaped like little eggs. They are naturally smoked in ovens with wooden shavings. They have bronze colour and compact elastic paste.

Their taste is spicy and mild, their smell typically smoked.

They are eaten alone and sometimes cooked as ingredients for several dishes. They are generally chosen as final products but they also are served as starters or with snacks and main courses.
