SMOKED BURRATINA WITH PESTO AND MARINATED TOMATOES SAUCE

Ingredients (4 servings):
4 smoked affumicate
basil pesto (basil, pine nuts, grana padano, garlic, oil)
cherry tomatoes
sugar
salt
pepper
basil

Make pesto with basil, pine nuts, Grana Padano, garlic, oil.

Cut tomatoes into wedges and put them in a bowl with sugar, salt, pepper and basil. Marinate them for about 2 hours.

Arrange pesto and some tomato wedges in the middle of a dish. Then place the smoked burratina at room temperature in the middle. Garnish with other marinated tomato wedges.
