FRIED SMOKED SCAMORZINE WITH CHILI PEPPER JAM

Ingredients (4 servings):
8 smoked scamorzine (30 gr./1.06 ounces each)
water
durum-wheat semolina
extra virgin olive oil
chili pepper jam
parsley

Pour chilled water into a bowl, then add durum-wheat semolina forming a sort of batter.

Dunk the smoked scamorzine into the batter.

Fry them for 2 minutes in a pan with hot oil (150 degrees). As soon as they turn golden, strain and dry on blotting paper.

Place them in a dish and serve them with chili pepper jam and parsley.
