Matured provolone

Matured provolone is a matured stretched curd cheese, produced only with cow’s milk, traditionally worked and shaped by hand and matured for about 12 months.

It has a yellow colour with a very pasty consistency, hard on the outside and with a very intense and slightly spicy flavour, and is also excellent when eaten in flakes or accompanied by an excellent glass of wine.
